Recipe: Nutella Banana Crepes!


As you may or may not already know, my middle son has a pretty severe allergy to dairy (except for butter... go figure). I've tried my best to simply tweak recipes so that we can still enjoy favorite meals, together, as a family. There's nothing worse than being the one left out of a great meal!

  Breakfast can be especially difficult, because so many recipes revolve around milk. Thankfully, we've found almond and coconut milk make for fantastic substitutions, and you never know the difference. Try these Nutella Banana Crepes and you'll see what I mean.

Ingredients

Directions:

1) Whisk eggs in a bowl, then add milk, flour, salt and oil. Heat a medium-sized pan over medium-high heat and add a small amount of butter or oil (I used about a tablespoon every two or three crepes).

2) Pour about a 1/4 cup of batter in the pan and tilt the pan around until the batter covers the entire surface. Gently flip the crepe after a minute or two and allow to finish cooking. Flip the crepe onto a plate.



3) Top crepe with a tablespoon or two of Nutella (to your preference) and slices of banana. Roll up and serve with dusting of powdered sugar, if desired.

4) When serving kiddos, expect to wait awhile to actually eat one yourself. No sooner did I get a crepe plated for one boy, then the other one was ready for a new one! If that's not a testamony to these crepes' deliciousness, I don't know what is.
