One of my favorite benefits of couponing is a well-stocked pantry. Take, for example, these free tortillas I scored at Albertsons with the $1 La Victoria coupon here* and a doubler.
What's a girl to do with so many free tortillas? The husband was in need of some hearty breakfast foods he could take to work and eat there, so breakfast burritos it would be. Filled with lots of good protein, these burritos are super-easy to make, and you probably have most of the ingredients on hand already. Frugal and delicious, I totally recommend you make these Freezer Breakfast Burritos for an easy, quick and filling breakfast!
Freezer Breakfast Burritos
Yield: 35 burritos
Ingredients:
- 24 eggs
- green bell pepper, diced
- two onions, diced
- two cans of diced chili peppers
- salt and pepper to taste
- shredded cheese (I used Coastal cheddar cheese from Costco)
- 2-3 lbs. breakfast sausage, cooked and crumbled
- burrito-sized tortillas
- chipotle chili pepper ("the secret ingredient"), optional
- plastic wrap
- gallon-sized freezer storage bags
Directions:
1) Saute your peppers and onions in a pan with some oil or butter on medium heat until translucent and softened. Whisk eggs together in a bowl, then add to pepper and onions. Cook thoroughly, and season with salt and pepper to taste. Let cool.
2) Lay out your burrito components so they are easy to assemble-whatever way works best for you. I like to keep the plastic wrap just to the left of the cutting board so I can easily pull out a sheet before I assemble each burrito.
3) To assemble, I pulled out a length of plastic wrap and set the tortilla on top. Then, I layered each tortilla with cheese, sausage and egg scramble, then added a few dashes of the chipotle pepper. Wrap the tortilla into a burrito, then wrap the burrito tightly in plastic wrap.
4) Each gallon-sized Ziploc held seven burritos. Place directly in freezer and when you like, pull out a burrito and reheat in the microwave, 1-2 minutes should do. You can reheat the burrito in the plastic wrap, or remove the wrapping; either way works fine.
The ingredients are easy to play around with. I simply used what I had on hand, but I plan to add some spinach, kale, hashbrowns and bacon in future batches. Have fun with the combinations and keep it simple! Enjoy!
