{I meant to get this post series rolling last week, but between being in the last month of pregnancy and the general busyness of the holidays, it took a little longer to get here. Better late than never, right?}
I'm glad to finally be posting my favorite Christmas baking recipes this year, with some new recipes to go along with my old stand-bys. I'll start off with my favorite new find of 2012, adapted from this recipe by The Recipe Nut. If Christmas had a flavor, this would be it! I love Peppermint; my husband loves shortbread. This recipe is match made in cookie baking heaven!
Ingredients:
1 cup butter
1/2 cup white sugar
1 egg
1 tsp. vanilla
2 3/4 cups flour
1 tsp. baking soda
1/2 tsp. baking powder
candy canes (I used a box of 12)
Directions:
1) Cream together butter and sugar. Add in egg and vanilla.
2) In a separate bowl combine flour, baking soda and baking powder. Add in dry ingredients to the butter mixture.
3) Using the food processor, grind candy canes down to little bits; add to mixture.
4) Form small cookie balls and refridgerate overnight.
5) Bake for about 10 minutes at 375 degrees. {Be sure to check at the 8-minute mark so as not to overbake.}
