My kiddos love it when we shake things up at lunch time. Nothing crazy, mind you! This weekend, I didn't feel like making bread (read: laziness), so I sought the freezer for help. Thankfully, I stashed away the Udi's Gluten Free breads we got for free (from a previous Facebook offer), and one loaf happened to be a Cinnamon Raisin bread. I spread on some peanut butter and made a sandwich. It was a fun twist to the regular PB&J, and let's just say the kiddos devoured them and required seconds.
I was much less lazy today and decided to try a homemade Cinnamon Raisin bread, in my handy-dandy bread machine. I tweaked the recipe here just a little, and this is what I came up with:
Bread Machine Whole Wheat Cinnamon Raisin Bread
- 2 tsp. yeast
- 1 cup, plus 2 Tbls. warm water
- ½ cup butter (though you could use coconut oil)
- 4 tablespoons honey
- 2 cups whole wheat flour
- 1 cup bread flour
- 2 teaspoons cinnamon
- ½ teaspoon salt
- 1 cup raisins
1) Combine yeast and water in the bread machine bowl and let sit for a few minutes, until bubbly/foamy.
2) Melt butter, then add in. Add remaining ingredients, and follow the instructions on your bread machine for whole wheat bread.
3) Carry on with life for the next few hours and when the bread has finished baking, enjoy!
