Cooking with Coupons: White Chicken Chili

You've probably seen and heard quite a bit about "extreme" couponing lately. The fact is, coupons are a practical and easy way to save money. I'm going out on a limb here, but I bet you'd rather save money on the necessities (not mass quantities of mustard).

  In that vein, I thought it would be fun to share with you all some of my family's favorite recipes, along with money-saving tips and coupons. Here's what my family ate for dinner last night:


 
White Chicken Chili


  First, drizzle some olive oil in a baking dish and add about 2 lbs of chicken breasts. Season with salt and pepper and bake until thoroughly cooked (at about 400 degrees F.)



  I used Zaycon chicken. You could also print some Foster Farms coupons today! Once cooked, just cube the chicken into 1 inch pieces. Then, gather these ingredients:




olive oil
garlic, minced
3/4 cup of onion, diced
green bell pepper, diced (optional)
one or two cans of green chilis, chopped
three or four cans of beans (I prefer the chili beans for the added spices)
*You'll see the "Manager's Special" clearance tags on the cans. They were marked at 50% off because of minor dents! Always check your grocery store's clearance shelf for big savings on dented, but otherwise perfectly fine, canned goods! 
1 1/2 cups of chicken broth 
*I buy this Pacific Natural Foods Organic Free Range Chicken Broth, 32-Ounce Containers (Pack of 12)when it goes on sale at Amazon; be sure to choose a "Subscribe and Save" option to save the most money!
oregano, chili powder, cumin, salt and pepper (season to your taste; I use liberal amounts of chili powder and cumin)
 


  Saute the garlic in some olive oil until golden and irresistibly fragrant.


  Then, add the diced onion and green bell pepper and saute until softened. Pour in the chicken broth to be sure to scrape the yummy bits from the bottom of the pan. Transfer the veggies and broth to a stock pot and add the remaining ingredients listed above, including the diced chicken. Heat until boiling, then reduce to simmer, stirring often.


 


  Then, stir in the following ingredients:

1/2 milk
1 cup of sour cream 
*I used Darigold sour cream, because with the $0.40/1 coupon here (use zip code 98052 to find), it was only a $1.00 at QFC!
1/2 cup of cheddar cheese, shredded 
*I got the entire 2 lb loaf for only $3.99!

  Simmer until thickened (about 10 minutes) and serve! We enjoy it with some cheese atop and a slice of cornbread on the side.
